DAVID'S PIE CRUST
2 cups all purpose flour
1 teaspoon sugar
1/4 teaspoon salt
Put into the bowl of your food processor with knife blade attachemnt. Pulse the ingredients a few times to mix well.
2 sticks minus one tablespoon of cold unsalted butter
Cut the butter into chunks and add it to the food processor. Pulse until mixture resembles coarse cornmeal.
1/3 cup ice water
Add the water. Process until the dough forms a ball and stop immediately. Remove the dough ball from the processor and divide into two equal parts. Wrap each in plastic wrap and form into round discs 4 inches wide. Refrigerate for one hour. Take one disc out and roll out on a floured pastry cloth. Fills a nine-inch pie plate.
This recipe makes two nine-inch pie crusts. The unused crust will keep well in the freezer.
