DAVID’S SECRET PANCAKE RECIPE

These pancakes have become a family favorite.  I make them often on Saturday or Sunday mornings.  This recipe makes 16 to 20 pancakes.

2       large eggs
2       cups buttermilk
4       tablespoons vegetable oil, plus more for coating the pan
1       teaspoon vanilla extract

1       cup whole wheat flour
1       cup white flour
4       tablespoons orange zest
2       tablespoons sugar
4       teaspoons baking powder
1       teaspoon baking soda
½      teaspoon salt
1       apple peeled and grated

Beat the eggs with a wire whisk; then stir in the buttermilk, oil and vanilla.  Add all the dry ingredients and the grated apple and orange zest and stir until smooth.  Let the batter rest for half an hour.

Coat a large frying pan or griddle with oil and place on medium high heat.  Pour on the batter by large spoonfuls.  Cook until the cakes rise and their surfaces are dotted with holes.  Turn and cook the other side.  Serve with maple syrup.
