CROISSANT FRENCH TOAST

This is a deliciously rich and buttery version of traditional French Toast. And it's a terrific use for day old croissants.

2           croissants
2           eggs
1/4        cup milk
1/8        teaspoon cinnamon
              pinch of salt
              pinch of freshly grated nutmeg
   

Cut a little off the rounded top of each croissant. Then, slice the croissants horizontally into thirds.

Break the eggs into a small bowl and add the milk, cinnamon, salt, and nutmeg. Whisk together until the eggs are well beaten. Pour the egg mixture into a shallow dish and place a slice of croissant into the mixture. After a minute or so, flip the slice of croissant over so the other side will soak up some of the egg mixture. Cook the soaked slice in a frying pan over medium heat until lightly golden brown on each side. As one slice cooks, begin soaking the next slice so it will be ready.

Serve with warm maple syrup.
