POLENTA
1 quart water
1 cup polenta
1 teaspoon salt
Take 2 1/2 cups of the water and bring to a boil in the top half of a double boiler. Add the salt. Mix the cup of Polenta with the remaining 1 1/2 cup of cold water and add to the boiling water. Bring back to the boil, stir, and place on top of double boiler. Bring water to boil and cook for 45 minutes, stirring occasionally. Pour cooked polenta into large greased pie plate or a 9 X 9 inch square pan. Cool and refrigerate. When jelled, slice.
Heat slices in butter and top with parmesan cheese, or treat them as you would past and top with tomato sauce. You can also grill the sliced polenta on your BBQ.
