Green teas differ from black teas in that they are not fermented. Freshly picked green tea leaves are fired or steamed to prevent the flavorful juices within the leaves from oxidizing during the subsequent rolling and drying process.
Oolong teas, unlike black teas, are only partially fermented. They are lower in acid and tannins than black teas. The leaves tend to be greenish brown in color.
