Black teas are first dried or "withered". They are then rolled to liberate the flavorful juices within the leaf cells. And finally, the leaves are allowed to ferment in a cool, damp atmosphere. During fermentation, oxygen reacts with the juices giving black teas their distinctive robust flavor.
